KALE & STRAWBERRY SALAD
1 large bunch organic kale (stems removed) - 45mcg/100g
6 oz. strawberries, (halved) - 51.6mcg/100g
2 tbsp flax seeds - 380mg/100g
½ cup basil leaves
2 tbsp. fresh lemon juice - 4mcg/100g
2 tsp honey
2 tsp balsamic vinegar
2 tbsp. extra-virgin olive oil
2 scallions (thinly sliced)
Crushed red pepper flakes
How to Prepare:
In a medium bowl, combine the strawberries, balsamic vinegar, basil leaves, lemon juice, flaxseeds, and honey.
Chop the kale into your desired size and massage with extra virgin olive oil to tenderise the leaves.
In a large salad bowl, mix all of the greens together.
Season everything with sea salt and sprinkle red pepper flakes.
Add the strawberry-mixture over the greens; drizzle with more extra virgin olive oil (optional) and sprinkle with sliced almonds and walnuts.
Optional: add a few spoonfuls of sour cream, parmigiano reggiano, or crumbled feta or goat cheese for an extra dose of protein and flavour.
